What Is Their Main Difference?
Both of these words refer to showing something to an audience. However, an 'exhibit' refers to showing one or a few objects to a small group of people. An 'exhibition', contrariwise, refers to a kind of gallery, displaying different objects or artworks to the public.

Are They Interchangeable?
Although they both refer to displaying something, they cannot be used interchangeably because one is displayed to a small number of people, whereas the other one shows a large scale of artwork to the public. Compare:

X I was expecting a much more comprehensive art exhibit, honestly.
Here, we cannot have a comprehensive 'exhibit' because it is small in nature.
