What Is Their Main Difference?
Both are features of something. However, 'quality' is a special characteristic of something, whereas, 'quantity' shows the amount of it. In other words, 'quality' refers to the way something is, while 'quantity' is about its price.
Differences
As mentioned above, 'quality' refers to the manner of something. It is subjective and it indicates a special characteristic of something. The examples below show the quality of the items:

'Quantity', on the other hand, refers to the price or number of something. As it is clear, the number of something is fixed so it is objective. Look at the examples below:

Are They Interchangeable?
As it was clear above, these two refer to different features of objects. Therefore, they can never be used interchangeably. Compare:
